How much should I order?
As a guide, allow around 250–300g of raw joint per adult when served as a main meal with sides.

Shoulder loses fat and moisture during slow cooking. Choose the larger allowance for generous pulled-pork portions or leftovers.

Cooking tips for this cut
Shoulder suits slow roasting or covered slow cooking. For pulled pork, allow enough time for the meat to become tender enough to pull apart; reaching a safe temperature alone does not mean it is ready to shred.
Use a clean food thermometer to check that the centre reaches 70°C for 2 minutes, or 75°C for 30 seconds. Check meat away from bones. Food Standards Agency cooking guidance.
